Healthy Salmon Loaf

Ingredients

  • 4 (10 oz) pouch Chicken ofthe Sea® Pink Salmon
  • 3 Eggs
  • 3 c Whole wheat breadcrumbs
  • 1 c Onion, minced
  • 1 c Celery, minced
  • 1/4 c Ketchup
  • 2 Tbsp Dijon mustard
  • 2 Tbsp Dried parsley
  • 2 Tbsp Dried dill leaves
  • 1 tsp Smoked paprika
  • 1/2 c Skim milk

Cucumber Dill Sauce

  • 1 c Fat-free sour cream
  • 2 Tbsp Fresh lemon juice
  • 1 Cucumber, grated
  • 1 Tbsp Dried dill leaves

Directions

  1. Stir together all loaf ingredients and press into oiled 9"x5" loaf pans.
  2. Bake at 375°F for 45 min. or until fi rm.
  3. Cool and then invert pan. Slice each loaf into 8 slices.
  4. Stir together sauce ingredients and top each serving with sauce.Garnish with drained capers and herb sprigs if desired.
