Lemony Salmon Patties

The tasty lemon touch makes these salmon patties a yummy dish for everyone.

Lemony Salmon Patties

Ingredients

  • 1 (64 oz) can Chicken of the Sea® Pink Salmon
  • 4 1/2 cups milk
  • 6 cups soft bread crumbs
  • 6 eggs, beaten
  • 1/4 cup + 2 tablespoons fresh parsley, chopped
  • 2 tablespoons minced onion
  • 1 tablespoon Worcestershire sauce
  • 1 1/2 teaspoons salt
  • 3/4 teaspoon pepper

Lemon Sauce

  • 3/4 cup butter or margarine
  • 1/2 cup all-purpose flour
  • 4 1/2 cups milk
  • 3/4 cup lemon juice
  • 1 1/2 teaspoon salt
  • 1 teaspoon cayenne pepper

Directions

  1. Combine salmon, milk, bread crumbs, egg, parsley, onion, Worcestershire sauce, salt and pepper.
  2. Mix well.
  3. Spoon into eight greased muffin cups, using 1/4 cup in each.
  4. Bake at 350° F for 45 minutes or until browned.
  5. Meanwhile, prepare the sauce by melting butter in a saucepan; stir in the flour to form a smooth paste.
  6. Gradually stir in milk; bring to a boil over medium heat, stirring constantly.
  7. Cook for 2 minutes or until thickened.
  8. Remove from heat; stir in lemon juice, salt and cayenne.
  9. Serve over patties.
