Rainbow Tuna Sandwich

Ingredients

  • 1 (2.5 oz) pouch Chicken of the Sea® Tuna
  • 1/4 cup frozen veggie medley (carrots, corn, peas) microwaved then cooled
  • 2 Tablespoons fresh diced red pepper
  • 2 Tablespoons red onions, diced
  • 2 teaspoons plain Greek yogurt
  • Juice of 1 lemon
  • 1/8 teaspoon salt, or to taste
  • 1/4 teaspoon fresh ground pepper
  • 1 sandwich thin or 2 pieces light bread, toasted

Instructions

  1. In a large bowl, mix together tuna, veggie medley, red pepper, onions, yogurt, lemon juice, salt and pepper.
  2. Stir to mix well. Serve between two sandwich rounds or bread.
