Should I be concerned about mercury in shelf stable tuna?

Mercury is a heavy metal found naturally in air, water, and soil. Seafood, among many other things, can contain minute amounts of mercury. The FDA has set a guideline for permissible levels of methyl mercury in canned tuna at 1.0 parts per million (ppm), which includes a 10x safety factor to allow for variability in fish. For example, one could consume 164 oz (or 10 lbs) of canned tuna before reaching the limit where a potential adverse event could occur. All Chicken of the Sea products are well within the FDA guideline for mercury.

Additionally, in 2021, the FDA revised its guidance to pregnant women, breastfeeding moms and young children to consume more fish and seafood, including salmon and tuna, thanks to its plethora of health benefits. The advice can be found here

Why the name Chicken of the Sea?

In the “old days”, fishermen referred to white albacore tuna as “Chicken of the Sea.” It was called this because the white color and very mild flavor reminded them of chicken. The founder of the company thought this would be a unique name for a brand of tuna, and the Chicken of the Sea brand is now known worldwide!

Why do we add vegetable broth to our tuna and salmon products?

Vegetable broth is added to some products as a flavor enhancer, resulting in a milder flavor. The broth currently used is derived from one or more of the following vegetables:

  • Beans (including soybeans)
  • Carrots
  • Celery
  • Potatoes
  • Peas

Are Chicken of the Sea Products Halal?

Certain Chicken of the Sea products are Halal-certified. Be sure to look for the “M” logo on the packaging.

Are all Chicken of the Sea products wild caught?

Many of our items are wild caught, except for our oysters and some of our clam items. All Chicken of the Sea tuna, salmon, sardines, crab are wild caught along with our clams sourced from The Netherlands.

Why is my white albacore tuna not always white?

Under U.S. regulations, only tuna from the albacore species may be labeled white tuna. White tuna packs must meet certain color criteria when measured with a light meter. The term “white”, however, does not mean that the tuna, when cooked, will be absolutely white, but only that it comes from the lightest color of all tuna species. In fact, cooked albacore may vary in color from nearly white to light pink, beige, or tan. These natural differences in fish along with variations in diet and environment may result in some product-to-product variation.

Our Quality Control procedures ensure each fish lot meets all quality and safety standards. Although the types of variations described above may be apparent in some of our canned products, only good quality fish is used in our tuna products.

Can you freeze Chicken of the Sea products?

Our products may be frozen in an air-tight container or freezer bag. However, we do not recommend freezing the product as freezing may greatly impact its taste and quality. Should you freeze the product, please do not freeze the product in the can, pouch, or cup it was purchased in as doing so will greatly impact its quality.
