Ingredients
- 1 (12 oz) bag Chicken of the Sea® Responsibly Raised Cooked Frozen Shrimp, thawed
- 1/2 cup olive oil
- 1 bunch cilantro (or parsley), roughly chopped about 2 cups
- 2 fresh Thai chilies (or to personal taste), sliced and divided
- 2 cloves garlic, minced
- 1 Tablespoon fish sauce (or soy sauce)
- 1 teaspoon honey
- Zest 1 lime
- About 2 Tablespoons fresh lime juice
- 1/2 teaspoon salt, or to taste
- Limes wedges, for serving
Instructions
- In a small food processor or personal blender, combine olive oil, cilantro, about half the sliced Thai chilies, garlic, fish sauce, honey, lime zest and juice, and salt. Briefly blend until texture is slightly coarse, or to your preferred texture.
- Add chimichurri sauce to serving bowl.
- Thinly slice red Thai chili and add to top of sauce.
- Arrange shrimp around the sauce and serve with lime wedges.
