- 1 (2.5 oz) pouch Chicken of the Sea® Tuna
- 2 dried apricots, diced
- 5 Kalamata olives, diced
- 3 Tablespoons finely diced cucumber
- 3 Tablespoons finely chopped parsley
- 3 Tablespoons chopped red onion
- 2 teaspoon plain Greek yogurt
- Juice of 1 lemon
- 1/8 teaspoon salt
- 1/4 teaspoon fresh ground pepper
- 2 slices bread, toasted
- Lettuce, for sandwich
- In a large bowl, mix together tuna, apricots, olives, cucumber, parsley, onion, yogurt, lemon juice, salt and pepper.
- Stir to mix well. Serve between two slices of toasted bread with lettuce.
