- 1 (2.5 ounce) pouch Chicken of the Sea® Albacore or Light Tuna
- 1/4 cup frozen veggie medley (carrots, corn, peas) microwaved then cooled
- 2 tablespoons fresh diced red pepper
- 2 tablespoons red onions, diced
- 2 teaspoons plain Greek yogurt
- Juice of 1 lemon
- 1/8 teaspoon salt
- 1/4 teaspoon fresh ground pepper
- 1 sandwich thin or 2 pieces light bread, toasted
- 1 slice fresh red pepper (optional)
- 1 olive, halved (optional)
- 6 half slices cucumber (optional)
- In a large bowl, mix together tuna, veggie medley, red pepper, onions, yogurt, lemon juice, salt and pepper.
- Stir to mix well. Serve between two sandwich rounds or bread.
