Sardine Caesar Salad

A good Caesar salad is usually all about the anchovies, but we think sardines make just as much sense. This recipe uses them in the dressing and as a topping for a subtle twist on a classic.

Chunky Sardine Caesar Dressing Ingredients

  • 2 sardine filets, bones removed
  • 1/2 cup mayonnaise
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Dijon mustard
  • 2 Tablespoons fresh lemon juice
  • 2 Tablespoons finely shredded Parmesan cheese
  • 1/4 teaspoon salt, or to taste
  • black pepper, to taste

Instructions

  1. Make the Dressing: In a bowl, add the oil from the sardine can. Add 2 sardine filets, mayonnaise, garlic powder, mustard, lemon juice, Parmesan cheese, salt, and pepper.
  2. Mash the sardines into the dressing mix.
  3. Add romaine to plates and top with eggs, red onion, and remaining sardine filets. Drizzle with dressing.
  4. Top with Parmesan cheese, croutons and lemon wedges. Season with additional salt and pepper, to taste
