  • 1 Tablespoon sesame oil
  • 1 Tablespoon low-sodium soy sauce
  • 1 Tablespoon water
  • 2 teaspoon rice vinegar
  • 1 teaspoon grated ginger

Instructions

  1. Cook the soba noodles as per the instructions on the package. Set aside to cool.
  2. In a small bowl, whisk together the sauce ingredients until well combined. Set aside.
  3. Drizzle half of the sauce over the noodles and toss to evenly coat.
  4. Add the salmon, cucumbers, carrots, edamame, and green onion.
  5. Drizzle the remaining sauce over the noodles. Toss to coat and mix all of the ingredients into the noodles.
  6. Garnish with sesame seeds and black pepper.
