Cheesy Sriracha Salmon Toasts

These Cheesy Sriracha Salmon Toasts are the perfect answer to lunchtime boredom!

  • 1 (2.5 oz) pouch Chicken of the Sea® Pink Salmon, Skinless & Boneless
  • 2 slices of your favorite bread
  • 1 Tablespoon butter, softened
  • 1 Tablespoon Sriracha sauce, plus more for drizzling over the finished toasts (I really like the Trader Joe’s brand!
  • 2 Tablespoons mayonnaise
  • 2 teaspoons pickle relish
  • 1/4 teaspoon freshly ground black pepper, plus more for sprinkling over the finished toasts
  • 1/2 cup shredded sharp cheddar
  • chopped fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Turn oven broiler on high.
  2. Place slices of bread on a baking sheet pan. Spread butter over bread.
  3. In a bowl, stir together salmon, Sriracha, mayonnaise, pickle relish, and black pepper.
  4. Divide salmon mixture between the two pieces of bread. Top with cheddar.
  5. Place baking sheet pan under broiler, about 6-inches from the top of the oven. Broil for 2-3 minutes, or until hot and the cheese is melty.
  6. Add a bit more Sriracha and freshly ground black pepper over the top, if desired. Sprinkle on a bit of cilantro and serve with lime wedges. Enjoy hot.
