Ingredients
- 2 (3.75 oz) cans Chicken of the Sea® Sardines in Water, drained
- 2 Tablespoons olive oil
- 2 garlic cloves, minced
- 2 cups flat-leaf parsley, roughly chopped
- 1/2 teaspoon lemon zest
- 3 Tablespoons fresh lemon juice
- 1 teaspoon kosher salt, or to taste
- 1/3 teaspoon fresh cracked pepper
- 2 teaspoons capers, drained
- 1 1/2 teaspoons Dijon mustard, or more to taste
- 1/4 cup good olive oil
Instructions
- Heat the 2 Tablespoons of olive oil in a skillet and add garlic. Stir frequently until garlic is fragrant, be careful to not burn! Take off heat and set aside.
- In a food processor, combine parsley, lemon zest, lemon juice, salt, pepper, capers, sardines and Dijon mustard. Pulse to combine.
- Add olive oil through the top opening while blending until it reaches desired consistency.
- Taste and adjust seasonings to your liking.
- Serve over steak, fish, or on toasted bread with cheese.
