- 1 (3.75 oz) can Chicken of the Sea® Sardines in Lemon and Extra Virgin Olive Oil, oil reserved & sardines divided
- 2 romaine hearts, halved or chopped
- 2 boiled eggs, quartered
- 1 Tablespoon sliced red onion
- 1/4 cup Parmesan cheese
- Croutons (optional)
- Lemon wedges (optional)
Chunky Sardine Caesar Dressing Ingredients
- 2 sardine filets, bones removed
- 1/2 cup mayonnaise
- 1/2 teaspoon garlic powder
- 1/2 teaspoon Dijon mustard
- 2 Tablespoons fresh lemon juice
- 2 Tablespoons finely shredded Parmesan cheese
- 1/4 teaspoon salt, or to taste
- black pepper, to taste
Instructions
- Make the Dressing: In a bowl, add the oil from the sardine can. Add 2 sardine filets, mayonnaise, garlic powder, mustard, lemon juice, Parmesan cheese, salt, and pepper.
- Mash the sardines into the dressing mix.
- Add romaine to plates and top with eggs, red onion, and remaining sardine filets. Drizzle with dressing.
- Top with Parmesan cheese, croutons and lemon wedges. Season with additional salt and pepper, to taste
