Sardine Caesar Salad A good Caesar salad is usually all about the anchovies, but we think sardines make just as much sense. This recipe uses them in the dressing and as a topping for a subtle twist on a classic. Total Time 30 minutes Servings 2 servings Ingredients Share Salad Ingredients1 (3.75 oz) can Chicken of the Sea® Sardines in Lemon and Extra Virgin Olive Oil, oil reserved & sardines divided2 romaine hearts, halved or chopped2 boiled eggs, quartered1 Tablespoon sliced red onion1/4 cup Parmesan cheeseCroutons (optional)Lemon wedges (optional)Chunky Sardine Caesar Dressing Ingredients2 sardine filets, bones removed 1/2 cup mayonnaise 1/2 teaspoon garlic powder 1/2 teaspoon Dijon mustard 2 Tablespoons fresh lemon juice2 Tablespoons finely shredded Parmesan cheese1/4 teaspoon salt, or to taste black pepper, to taste Instructions Make the Dressing: In a bowl, add the oil from the sardine can. Add 2 sardine filets, mayonnaise, garlic powder, mustard, lemon juice, Parmesan cheese, salt, and pepper. Mash the sardines into the dressing mix. Add romaine to plates and top with eggs, red onion, and remaining sardine filets. Drizzle with dressing. Top with Parmesan cheese, croutons and lemon wedges.
