Ingredients
- 1 (3.75 oz) can Chicken of the Sea® Sardines in Extra Virgin Olive Oil
- 1 cup uncooked polenta
- 1 Tablespoon olive oil
- 1 cup cherry tomatoes
- 1/2 cup grated Parmesan Cheese
- 1/2 cup chopped herbs (parsley, dill or basil)
- salt, to taste
- black pepper, to taste
- Optional chili flakes, for topping
Instructions
- Cook polenta to package instructions.
- Heat pan with olive oil over medium-high heat. Sear cherry tomatoes until blistered.
- Add sardines and oil from sardine can to pan. Heat sardines until warm.
- Place about 1/2 cup of polenta on plate, top with warm tomatoes and sardines.
- Top with Parmesan cheese, chopped herbs, salt, pepper, and chili flakes to taste. Drizzle with additional olive oil if desired.
