Sardines on Creamy Polenta

Comfort food doesn’t have to take hours, and this creamy, rich polenta with sardines is proof.

Instructions

  1. Cook polenta to package instructions.
  2. Heat pan with olive oil over medium-high heat. Sear cherry tomatoes until blistered.
  3. Add sardines and oil from sardine can to pan. Heat sardines until warm.
  4. Place about 1/2 cup of polenta on plate, top with warm tomatoes and sardines.
  5. Top with Parmesan cheese, chopped herbs, salt, pepper, and chili flakes to taste. Drizzle with additional olive oil if desired.
