Ingredients
- 2 (5 oz) cans Chicken of the Sea® Solid White Albacore in Water, drained
- 1 Tablespoon olive oil
- 1/2 small onion, chopped
- 1 zucchini, grated
- 2 Tablespoons lemon juice
- 2 eggs
- 1/2 cup seasoned breadcrumbs (or crushed pork rinds for low-carb/ gluten-free), plus extra for coating
- salt, to taste
- black pepper, to taste
- 2 Tablespoons olive oil, for frying
Instructions
- Heat 1 tablespoon olive oil to a frying pan on medium-high heat and add onions and zucchini. Cook until they are softened. Place in a bowl and allow to cool.
- In bowl with the cooled onions/zucchini, add tuna, lemon juice, eggs, bread crumbs, and salt and pepper and combine.
- Make tuna mixture into 8 (3-inch) patties and coat with bread crumbs.
- Add the 2 Tablespoons of olive oil to frying pan and warm over medium heat. Fry the tuna patties until they are a golden brown and warmed all the way through.
