Ingredients
- 1 (5 oz) can Chicken of the Sea® Solid White Albacore in Water, drained
- 1 avocado, seed removed
- 1 Tablespoon lemon juice
- Cracked black pepper, to taste
- 1/2 cucumber, ribboned or thinly sliced
- 2 slices crusty fresh bread, lightly toasted
- 1/2 cup cherry tomatoes, diced
- 2 lemon wedges, for serving
Instructions
- In a small bowl, smash avocado, lemon juice, and a few cracks of black pepper with a fork until the ingredients are incorporated and desired texture is achieved.
- With a vegetable peeler, peel layers of the cucumber lengthwise until you reach the seeds.
- Or, slice the cucumber into thin slices—preferably with a mandolin.
- Spread the smashed avocado over each slice of bread evenly.
- Divide the tuna between both slices of toast.
- Top the tuna with cucumber and tomatoes, a few cracks of black pepper, and lemon wedges.
