Ingredients
- 1 (5 oz) can Chicken of the Sea® Pink Salmon, Skinless & Boneless, drained
- 1 (6 oz) can Chicken of the Sea® Crab Meat, drained
- 1 (6.5 oz) can Chicken of the Sea® Chopped Clams, drained
- 1 (8 oz) package red beans and rice mix
- 1/2 cup sour cream
- 1/2 cup milk
- 1 cup grated pepper jack cheese (or Monterey Jack for milder version), plus additional for topping
- 1 Tablespoon Caribbean Jerk seasoning
- 1 (15 oz) can corn, drained
- 1 (5 oz.) can diced mild green chilies
- 1 Tablespoon lime juice
- 1 Tablespoon chopped Italian parsley
- Lime wedges, for serving
Instructions
- In a large saucepan, cook rice according to package directions.
- Meanwhile, in large bowl, whisk together milk and sour cream until well blended.
- Gently fold in salmon, crabmeat, minced clams, pepper jack cheese and jerk seasoning until all ingredients are well incorporated.
- During the last 5 minutes of cooking the rice, stir in corn, chilies and lime juice. Then gently fold in seafood mixture. Cook until heated through.
- Serve immediately topped with additional cheese and chopped parsley.
- Serve with lime wedges.
