Ingredients
- 1 can (4 ounce) Chicken of the Sea No Drain Solid White Albacore Tuna
- 4 slices whole wheat toast or sourdough bread
- 3 Tablespoons butter, divided
- 1 small zucchini, diced
- 1 small summer squash, diced
- 1 tomato, sliced
- 1/2 teaspoon garlic or onion powder
- Salt and pepper, to taste
- 4 slices low fat cheese or 1 cup shredded low fat cheese
Instructions
- Heat skillet on medium heat and melt 1 Tablespoon of butter. Add diced zucchini and summer squash.
- Sauté until soft and tender. Add garlic powder (or onion powder), salt and pepper to taste. Remove from pan and allow vegetables to cool slightly.
- Lay half the cheese on bread. Divide the zucchini and tuna between two sandwiches then top with a slice of tomato and remaining cheese.
- Spread butter on outsides of the bread.
- Heat the same skillet on low. Place sandwich on skillet and cook on both sides until golden and cheese is melted (cover pan if needed while cooking to help the cheese melt).
- Allow tuna melt to cool slightly before slicing in half. Enjoy!
