Salad Ingredients
- 1 (8 oz) cup Chicken of the Sea® Backfin Crab
- 2 cup cooked orzo
- 1/2 cup feta cheese
- 1/4 cup chopped fresh basil
- 2 Tablespoons chopped flat-leaf parsley
- 1 roasted red pepper from jar, sliced
- 1/4 cup sliced almonds
- 3 cups chopped spinach
- Zest of 1 lemon
Lemon Vinaigrette Ingredients
- 1/3 cup olive oil
- 1/4 cup apple cider vinegar
- 3 Tablespoons fresh lemon juice
- 1 Tablespoon honey
- 2 cloves fresh garlic
- 2 teaspoons lemon pepper
- 1/2 teaspoon salt
Instructions
- Whisk together all the lemon vinaigrette ingredients (olive oil, apple cider vinegar, lemon juice, honey, garlic, salt, and pepper). Set aside.
- In a large bowl combine all the salad ingredients except the crab (orzo, feta cheese, basil, parsley, roasted red pepper, sliced almonds, spinach, and lemon zest).
- Top the salad with the crab.
- When ready to serve, pour the lemon vinaigrette over the salad. Gently toss together.
- Season with additional salt and pepper if desired.
