“Red Beans and Rice” Seafood Chowder A rich and spicy seafood chowder with all the stick-to-your-ribs goodness of red beans and rice. Total Time 45 minutes Servings 8 servings Ingredients Share 1 (5 oz) can Chicken of the Sea® Pink Salmon, Skinless & Boneless, drained1 (6 oz) can Chicken of the Sea® Crab Meat, drained1 (6.5 oz) can Chicken of the Sea® Chopped Clams, drained1 (8 oz) package red beans and rice mix1/2 cup sour cream1/2 cup milk1 cup grated pepper jack cheese (or Monterey Jack for milder version), plus additional for topping1 Tablespoon Caribbean Jerk seasoning1 (15 oz) can corn, drained1 (5 oz.) can diced mild green chilies1 Tablespoon lime juice1 Tablespoon chopped Italian parsleyLime wedges, for serving Instructions In a large saucepan, cook rice according to package directions.Meanwhile, in large bowl, whisk together milk and sour cream until well blended.Gently fold in salmon, crabmeat, minced clams, pepper jack cheese and jerk seasoning until all ingredients are well incorporated. During the last 5 minutes of cooking the rice, stir in corn, chilies and lime juice. Then gently fold in seafood mixture.
