“Red Beans and Rice” Seafood Chowder

Instructions

  1. In a large saucepan, cook rice according to package directions.
  2. Meanwhile, in large bowl, whisk together milk and sour cream until well blended.
  3. Gently fold in salmon, crabmeat, minced clams, pepper jack cheese and jerk seasoning until all ingredients are well incorporated.
  4. During the last 5 minutes of cooking the rice, stir in corn, chilies and lime juice. Then gently fold in seafood mixture. Cook until heated through.
  5. Serve immediately topped with additional cheese and chopped parsley.
  6. Serve with lime wedges.
