- 2 (5 oz) cans Chicken of the Sea® Solid White Albacore in Water, drained
- 2 Tablespoons seasoned gluten free rice vinegar
- 1 Tablespoon soy sauce
- 1 Tablespoon sake (Japanese wine)
- 1/4 to 1/2 teaspoon red pepper flakes
- 1 Tablespoon chopped unsalted peanuts
- 1/2 sweet bell pepper, chopped
- 1 1/2 Tablespoons green onions, chopped
- For serving: 12 lettuce cup leaves
- In bowl, whisk together rice vinegar, soy sauce, sake, and red pepper flakes until well blended.
- Stir in peanuts, bell peppers and green onions.
- Gently flake and fold in tuna.
- Mix until all ingredients are blended.
- Chill until ready to serve. Serve in lettuce cup leaves.
