Tropical Tuna Stuffed Avocado

Ingredients

  • 1 (5 oz) can Chicken of the Sea® Solid White Albacore in Water, drained
  • 2 avocados, pit removed, sliced in half
  • 2 Tablespoons plain Greek yogurt
  • 1/2 mango, diced
  • 1 Tablespoon fresh cilantro, chopped
  • 1 Tablespoon lime juice
  • 2 Tablespoons red onion, finely chopped
  • 1/4 cup cucumber, chopped
  • 1/4 cup red bell pepper, seeds removed, finely chopped
  • 1/4 teaspoon cayenne pepper, optional for spice
  • salt, to taste

Instructions

  1. In a bowl combine the Greek yogurt, mango, fresh cilantro, lime juice, red onion, cucumber, red bell pepper, cayenne and dash of salt.
  2. Fold the tuna into the mixture.
  3. Slice your avocado in half and remove the pit.
  4. Scoop the Tropical Tuna Salad evenly into each half of the avocado. Enjoy!
