Tuna Avocado Toast

The only thing missing from avocado toast is protein. A super-quick tuna salad on top fixes that right up.

Instructions

  1. In a small bowl, smash avocado, lemon juice, and a few cracks of black pepper with a fork until the ingredients are incorporated and desired texture is achieved.
  2. With a vegetable peeler, peel layers of the cucumber lengthwise until you reach the seeds.
  3. Or, slice the cucumber into thin slices—preferably with a mandolin.
  4. Spread the smashed avocado over each slice of bread evenly.
  5. Divide the tuna between both slices of toast.
  6. Top the tuna with cucumber and tomatoes, a few cracks of black pepper, and lemon wedges.
