Mediterranean Caprese Crab Salad This simple salad combines the summery flavors of a classic Caprese with the sweetness of crab. Total Time 30 minutes Servings 4 servings Ingredients Share Salad Ingredients1 (8 oz) cup Chicken of the Sea® Jumbo Lump Crab 1 cup chopped cucumber 1 cup cherry tomatoes, chopped 1/3 cup kalamata olives 1/4 cup sliced red onion 1 cup chopped fresh mozzarella 3 Tablespoons chopped fresh basil 4 cups arugula Balsamic Dressing Ingredients1/4 cup olive oil 1/4 cup balsamic vinegar 1 Tablespoon fresh lemon juice 2 cloves fresh garlic 1/2 teaspoon salt black pepper, to taste Instructions Whisk together all the balsamic dressing ingredients (olive oil, balsamic vinegar, lemon juice, garlic, salt, and pepper). Set aside.In a large bowl combine all the salad ingredients except the crab (cucumber, cherry tomatoes, olive, red onion, mozzarella, basil, and arugula). Top the salad with the crab.
