Quick and Easy Zucchini Tuna Patties These bite-sized tuna patties make a great appetizer for summer get-togethers and holiday parties alike. Total Time 30 minutes Servings 4 servings Ingredients Share 2 (5 oz) cans Chicken of the Sea® Solid White Albacore in Water, drained 1 Tablespoon olive oil1/2 small onion, chopped1 zucchini, grated2 Tablespoons lemon juice2 eggs1/2 cup seasoned breadcrumbs (or crushed pork rinds for low-carb/ gluten-free), plus extra for coating salt, to tasteblack pepper, to taste2 Tablespoons olive oil, for frying Instructions Heat 1 tablespoon olive oil to a frying pan on medium-high heat and add onions and zucchini. Cook until they are softened. Place in a bowl and allow to cool. In bowl with the cooled onions/zucchini, add tuna, lemon juice, eggs, bread crumbs, and salt and pepper and combine.Make tuna mixture into 8 (3-inch) patties and coat with bread crumbs.Add the 2 Tablespoons of olive oil to frying pan and warm over medium heat.
