Quick and Easy Zucchini Tuna Patties

These bite-sized tuna patties make a great appetizer for summer get-togethers and holiday parties alike.

  1. Heat 1 tablespoon olive oil to a frying pan on medium-high heat and add onions and zucchini. Cook until they are softened. Place in a bowl and allow to cool.
  2. In bowl with the cooled onions/zucchini, add tuna, lemon juice, eggs, bread crumbs, and salt and pepper and combine.
  3. Make tuna mixture into 8 (3-inch) patties and coat with bread crumbs.
  4. Add the 2 Tablespoons of olive oil to frying pan and warm over medium heat. Fry the tuna patties until they are a golden brown and warmed all the way through.
